Description: | Destilado de Agave produced in Miahuatln, Oaxaca Maestro Vinatero Sosimo Jarquin 100% Madrecuixe (Agave karwinskii) Cooked in a conical underground oven Milled by hand using wooden mallet Naturally fermented in open-air wooden tanks (tinas) Distilled once using a copper pot still with refrescadera condenser The nose is a sundae bowl of peanut shells, cacao, and underripe banana. The palate is dense yet tropical, full of guava, wild cherry, more cacao, and wet slate. A stunner from one of the regions best. 49.5% Abv (abv may vary batch to batch) Sosimo Jarquin is rapidly becoming a sought-after name in Oaxacan mezcal, yet he works alone and produces a truly tiny amount of mezcal annuallyworking one harvest and just one oven loadin a process that lasts from September to April. Taking roughly 912 years to reach maturity, this regional example of Madrecuixe (a. karwinskii) is a clone-only subspecies, high in woody fiber and often yielding distinct notes of peanut shells, green banana, cacao, and petrichor with tropical highlights distinct to the Miahuatln region. Pairing just as delightfully with dessert as pad thai, this batch drinks beautifully now and has tremendous aging potential for years to come. |
