Harvest lasted from October 10th through October 20th, and 33 tons were harvested. 2200 cases were produced. Winemaking Notes 3 days cold soak 9 days in open top fermenters Aged 14 months in barrels 50% American Oak 50% French Oak Alcohol 14.8% Ta.63 Ph 3.8 Tasting Notes A blend from our three mountain vineyards which overlook Chiles Canyon. Dark cherry & raspberry with tinges of sage and clove. Good with aged Parmagiano. |
