Description: | Ichinokura is located in Matsuyama, Miyagi Prefecture, in the mountains outside Osaki City. Situated in the middle of a forest, it is blessed with clean, fresh air, abundant underground water and rice suitable for sake making. It was founded in 1973 by the merger of four rival Miyagi brewing families, each with a 100-300 years of history. The resulting enterprise was named "One" (Ichi) "Brewery" (Kura), and dedicated their efforts to the production of the finest expression of Miyagi sake. Miyagi Prefecture is Japan's breadbasket, and grows some of the world's finest sake rice. Ichinokura uses a minimum of 90% local rice in their sakes, which balance tradition with modern ingenuity. This Ichinokura is the world's first low ABV sake! It's only 8% alcohol, but quite full, flavorful, and refreshing, with notes of orange zest, Meyer lemon pith, and a long, clean finish. This is technically an off-dry sake, but its acidity is remarkably high, making it balanced and clean with a dry finish, much like a Kabinett Riesling. |
