| Description: | When Warenghem entered the French whisky business in 1983, it did so humbly, taking advantage of the experience the Scots have patiently accumulated over the past two centuries. It was inspired by the methods used across the Channel: the distillery is equipped with 2 pot stills and works mainly on types of casks that had already proven their relevance for the ageing of whisky in Scotland. At the beginning of the 2000s, however, it diversified by working with Breton oak essences and local casks, as shown by the excellent chouchen cask previously selected for Version Franaise in Europe. This time, the selected cask is a classic whisky ageing vessel: a second-fill Oloroso sherry cask, which hosted an intensely smoky distillate (45 ppm), made from malt that was dried over a fire fueled by Scottish peat. |
