Description: | Forget's cidre paysan is taken from a blend of local cider apple varieties drawn from winemaker and farmer Jerôme Forget's nearly 200 year-old orchards in Torchamp, Normandy. Forget is a dairy farmer in addition to a winemaker; his cows graze beneath his trees and, he says, "contribute to the upkeep of the orchards. Animals and fruit production go hand in hand." Fruit is hand-picked from off the ground, not from the trees' branches, to ensure total ripeness; the fruit is sorted according to ripeness levels in the cellar to create correct assemblages. All fruit harvested is pressed the same day as picking, as the fruit is very delicate and Forget wants to preserve freshness and detail.
