Description: | Greywacke's highest level Sauvignon Blanc, "Wi ld," is one of Marlborough's most pristine versions of the region's most popular variety. Fermented spontaneously using the wild yeast naturally occurring on the skin of the grapes (as opposed to inoculating with yeast as is common in many New World wine regions), this Sauvignon's ample body and unusual complexity comes by its epithet quite honestly. For this wine, Greywacke ferments half of the juice in old French barriques - this imparts none of the oak flavor associated with, say, California Chardonnay, but results in a far more lush, full-bodied, and textural interpretation of New Zealand Sauvignon. Add in the region's classic expressions of grapefruit, tangerine, and lemon zest, and you've got quite a luxurious white wine from one of the world's most beloved wine producing countries. |
