Description: | Pascal Clément, born into a family of growers in Savigny-lès-Beaune, carries forward a rich legacy rooted in Burgundy's winemaking traditions. His journey began under his father's guidance, whose Maison was established in 1950. After honing his craft for over two decades—including a formative stint at the esteemed Domaine Coche-Dury in Meursault—Pascal founded his own micro-négociant project in 2012. Based in a historic 1850s building with a magnificent arched cellar housing 200 barrels, Pascal collaborates with fifteen vineyard owners across Burgundy, meticulously selecting and managing each plot to reflect the region's diverse terroirs. Pascal's winemaking approach is rooted in minimal intervention, allowing each vintage to speak for itself. Native yeast fermentations and natural malolactic fermentation are hallmarks of his process, varying by vintage; for instance, 2016's "salty" year saw all whites complete malolactic fermentation, while 2015 did not. Reds are aged in Rousseau barrels, while whites rest in Damy, Billon, and François Frères barrels, with recent shifts toward larger 500L casks for a more harmonious wood-to-wine balance. Burgundy's revered vineyards, stretching from Auxerre to Lyon, demand a négociant model due to their fragmented ownership, where even a few rows of vines can yield profound expressions of this storied region. |
