| Description: | The most interesting thing about the Assyrtiko that grows on Santorini, aside from the wines it produces, is that the vines are trained in spiral formations. This makes them resemble baskets, and protects the grapes against the island's incredible heat. This example is richer and riper than many Santorini whites, but its acidity and piercing minerality are pronounced enough to tame the wine's fullness. The grapes come from vines in the vilages of Pyrgos, Emporio and Messaria-Vothonas. The soils are volcanic. Unoaked. A wine you can age for a good 5 years or more. |
