| Description: | This wine is made from 100% Tempranillo grapes harvested from 30-40 year old vines. Bunches are manually selected twice, first during harvest and then on a sorting table. The grapes are then destemmed and pressed vertically into stainless steel tanks. The fermentation process uses only native yeast. After fermentation, the wine is aged in a blend of oak barrels, 95% French oak aged for 5 years and 5% neutral American oak aged for 3-5 years, for a total of 12 months. The wine rests for at least 6 months in the bottle before it is released.
