Description: | Made with the expertise of non other than the Baron Philippe de Rothschild, Mouton Cadet seeks the best sites in Bordeaux to craft wines which are not only delicious but environmentally friendly. One example of this: in 2010 the Mouton Cadet Winery was equipped with a water treatment plant, the first of its kind to be installed in the Bordeaux region. Using reed beds to treat water used to clean vats biologically, it is totally environment-friendly and autonomous. The water treated in the various pools is used to water the Winery's green spaces and the surrounding natural environment. Sustainability aside, the wines consistently punch above their weight. The 2016 is redolent of cranberry with a hint of caramel. Notes of ripe fruit such as blackberry and cherry. A touch of herby garrigue, the wine develops a round and very rich mid-palate, culminating in a long and highly elegant finish on spice notes, especially white pepper. Pair with seared flank steak with chimichurri or young Cheddar style cheeses. |
