Seven years under Gravner's supervision later, and Sirk has honed his focus onto one grape: Tocai Friulano. For this bottling, he opted for longer aging on the lees to create a clear and direct wine with stone fruit, pear and yellow apple flavors, and a creamy, waxy texture balanced by crisp acidity. |
