Description: | The cuvee of monks crafed for le Semaritan restaurant, a creamy unctuous style, the only way to work on that is to work on the bubbles, 19 grams per liter as opposed to 24 4.5 metric bars of pressure opposed to 6 as that is the low limit for Champagne, under that and you would call this a Cremant, reducing the size of the bubbles 30% dem Mousse. They are the only champagne house to make all of their wines like this. No Malo so higher acidity, they age for 4-5 years before disgorgement and this wine has a bit of that biscuity like character, nutty almond notes. This wine has a bit of a herbal note to the tree fruit and lemon citrus, a smooth and creamy mousse on the tongue with a good bit of that sea shell like minerality and a tongue tingly finish, zesty lemon notes.
