Description: | Orange Wine. Organically Farmed. 35% Malvasia, 20% Verdicchio, 45% Trebbiano. This is a traditional style of white winemaking in Italy, leaving the skins in contact with the fermenting juice for about a week, though it's useful today to refer to this as an orange wine. "The nose is evocative of autumn on multiple sensory levels, with aromas of fennel fronds, chamomile tea, almonds, and tangerine that lead into a full but delicately rendered palate. Vitorchianos volcanic soils come through with a somber smoke-iron interplay, and glowing acidity lets the savory flavors coat the mouth, yet the overall impression is one of freshness and drinkability." - Rosenthal Wine Merchant. Monastero Suore Cistercensi "coenobium" is ninety minutes or so north of Rome in the Lazio region. Here at this quiet religious outpost, nuns of this religious order work vineyards and orchards and gardens organically. Under the guidance of Giampiero Bea of the Paolo Bea winery, its intrigue comes from the volcanic soils that underlay the vineyards and the extended skin contact duing about a week of fermentation (this being a vinification technique encouraged by Bea). Native yeast fermented without temperature control, aged on the fine lees in neutral containers. Bottled just before the next harvest is ready to process. |
