The buttery, ripe aromas of apple, peach, and lemon curd are touched with hints of mineral, cream, and spice. The texture is dense, almost fat, with a phenolic weight that brings a bit of structure. According to Pacalet, ‘It needs to be ripe – one mustn't put one's foot on the brakes!' This will drink well young, and should continue to hold for at least a decade. |
