Located just east of Monterey County, it's one of the oldest and most storied regions in CA, but remains largely untapped. Hand harvested and sorted before being footstomped, the grapes ferment on their skins for four weeks prior to gentle pressing, then age on fine lees for 11 months in neutral barrique.Notes of chamomile, honey, dried apricot, persimmon, quince, and candied fennel seed.
