| Description: | Tequila Gran Dovejo Blanco is 100% Blue Agave, unaged, and bottled directly after distillation. Tequila Gran Dovejo is a small-batch, traditionally crafted, premium tequila. Made from 100% of the finest, single-estate blue agave, our plants are exclusively grown in the beautiful highlands of Jalisco, Mexico by the Vivanco family who has been producing some of the finest agave in the region for over five generations. The agave plants are harvested at the peak of maturity, stripped of their "pencas", and the "pias" are then slowly roasted in traditional clay ovens for up to 36 hours. Once roasted, the "pias" are shredded in a mill after which the sweet agave juices are extracted. Once the juices are isolated, they are fermented with the use of champagne yeast while the harmonious sounds of music play in the background as this is found to optimize the sugar conversion. Our tequila is then double distilled in Alembic copper pot stills.
