Picking the grapes slightly early, enough to capture the fruit character but without too much sugar, they partially ferment the tart juice to 9.5% alcohol leaving just enough sweetness to balance the green grape acidity. Diagnosis? Delicious! Tangy and quaffable, you can drink much more without getting tipsy. Eureka!! You better buy two bottles. Serving Suggestion: Broiled skin-on chicken breast with honey mustard and raspberries over garlicky orzo. |
