A 60/40 blend of semillon and sauvignon blanc, 70 percent of this lot ferments in French oak barrels, and all of it ages on the lees in those barrels for five months, lending the wine an oak character that initially dominates the fruit. With air, the clean passion fruit flavors gain precedence, layering over the savory, toasty lees. Decant it for roast veal. |
