| Description: | The Giard family, of Domaine Du Manoir de Montreuil, can trace their part in calvados artistry back twelve generations, all the way to the 1700's. The orchard where the apples grow was planted on former marine site which is is miner rich and feeds into the apples another level of complexity. Around 30 kinds of apples go into the cider, which is extensively fermented and then aged for a year before being double distilled and put into a variety of very old oak casks so the reactive oxidation and evaporative concentration of aging can mellow the new spirit without adding to much oak flavor. The nosing shows dried red apples, candied yellow apples, Asian pear, apple blossoms, wet wood, grains and delectable spices. The flavors follow in a light, crisp, well mannered demonstration that build to tart apple, toasted cardamom & coriander and a mild, salty mineral taste. The finish is brisk, vivacious with a piquant fruitiness that lingers. |
