Umeshu is \u201cplum sake\u201d made from Japanese plums, or \u201cume,\u201d which are the fruit of Japan and known as a good-luck charm. \u201cUme\u201d are famously used to make \u201cumeboshi,\u201d pickled salted plums, which since ancient times, has been a revered delicacy of Japanese cuisine. Umeshu is such an integral part of Japanese culture that many Japanese make their own by steeping the fresh plums in alcohol.\u00a0 Umeshu should not be confused with \u201cplum wine,\u201d which is not made with sake and usually uses flavorings instead of fresh, whole, ume fruit.\u00a0 Joto Umeshu is crafted by the Fuji Brewery in Shimane, Japan, using the traditional and highest quality method. First, local and hand-harvested ume are carefully selected, then soaked and matured in sake. After months of maceration this plum-sake concentrate is blended with sake again to achieve the perfect balance.\r\n\r\nAbout\r\nJoto Nigori is brewed by the Nakao Brewery, which was founded in 1871and is now managed by the 6th generation of the family. The brewery has pioneered revolutionary techniques and ingredients in the sake industry. Unlike most nigoris, which are syrupy sweet, Joto Nigori shows depth and earthy notes, which make it more food-friendly and sophisticated.
