Lapostolle Xo Pisco 40% 750ml Coquimbo, Chile
Description: | Lapostolle Pisco Xo N/v D I S T I L L E R Y D E S C R I P T I O N Lapostolle was founded in 1994 by Alexandra Marnier Lapostolle and husband Cyril de Bournet upon their discovery of a unique Clos in the Apalta Valley sheltering 100 year-old pre-phylloxera vines. They quickly realized its potential for producing world-class wines. The Marnier-Lapostolle family has been recognized for fine wines and liqueurs since the early 19th century. In establishing her familys legacy in the New World, Alexandra brought generations of French winemaking tradition and expertise to the rugged landscape of the Colchagua Valley. Today Charles de Bournet, seventh generation, leads the winery in its newest chapter of innovation, punctuated by the official recognition of the Apalta Do in 2018. Together with Andrea Len, Technical Director & Winemaker, they continue to craft wines that honor the winery credo: French in essence, Chilean by birth. S Pi R I T D E S C R I P T I O N Lapostolle Pisco was created in honor of Jean Baptiste Lapostolle, the Frenchman who founded the House of Marnier-Lapostolle more than 180 years ago. Muscat of Alexandria and Pink Muscat from the Limari and Elqui Valleys are vinified, distilled, and aged using techniques adapted from Cognac production. Lapostolle Pisco has the soul of Cognac, the complexity of Gin, and the versatility of Vodka. Ta S T I N G N Ot E S Color: Bright, amber with copper red reflections. Nose: Fine, delicate nose with floral and fruity notes. Palate: Pleasant, round, and silky mouthfeel. Full-bodied and very aromatic, true to the nose. A pleasant finish with light gingerbread notes and a superb length. Pr O D U C T I O N Pr O C Es S To ensure the best distillation possible, Lapostolle uses a state-of-the-art Alembic Still from Cognac. Because their priority is preserving the quality of the grapes, they adapted the technique of distillation from Cognac to ensure the best quality of the alcohol while preserving the Muscat aromas. This Pisco was aged for six years in medium toast barrels in order to add complexity and sophisitcation. Lapostolle uses French barrels from Cognac rather than American Oak so as to not overpower the delicate aromatics. Some barrels are new, but others were previously used in Cognac. Aging: The Pisco has been aged for six years in French oak barrels, some new, others used in Cognac.
