Description: Terroir & Climate. The Pays d'Oc extends over 4 departments of the Languedoc Roussillon Region. It covers 200 km of coastline and a mosaic of terroirs with various geological shades: limestone, clay and sand. The climate is Mediterranean, temperate and pleasant, characterized by an excellent rate of sunshine throughout the year, mild winters and hot and dry summers. Wine. Selection of our adherent cellars and grapes at harvest time. Using a modern winemaking process in contact with wood that combines traditional methods with a long maceration period and the hot maceration process. Tasting Notes. A fresh and elegant Pinot Noir with aromas of raspberries and cherries revealing soft and supple tannins in the mouth. Food & Wine Agreement. Perfect with beef skewers, poultry, duck and meats in sauce. Region Description. (pee noh nwahr)—A tricky grape to grow, Pinot Noir makes some of the best wines in the world. The prototype wine is red Burgundy from France but Oregon, California, New Zealand, and parts of Australia also produce good Pinot Noir. The wine is lighter in color than Cabernet or Merlot with relatively high alcohol, medium-to-high acidity, and medium-to-low tannin. Its flavors and aromas can be very fruity or earthy and woodsy, depending on how it is grown. It is rarely blended with other grapes.
