Description: | Description: Chateau Doisy-Vedrines was founded in 1704, the property takes its name from one of its early owners, the Vedrines family. Today, the vineyard is owned by the well known Casteja family, who own numerous estates on the Right Bank including; Chateau Trotte-Vieille in St. Emilion, Domaine de L'Eglise and La Croix du Casse in Pomerol. In the Medoc, they own Chateau Batailley. Doisy-Vedrines currently has 27 hectares of vineyards situated on the highest plateau in Barsac; planted with 80% SĂŠmillon, 15% Sauvignon Blanc and 5% Muscadelle. The grapes are hand-picked and the yields are painfully low, even by Sauternes standards. Doisy-VĂŠdrines is one of the richest and most full-bodied wines in Barsac and it significantly uses the Sauternes Ac rather than the Barsac Ac. It needs at least 5 years of bottle ageing and the best vintages (2020, 2019, 2018, 2017, 2016, 2015, 2014, 2013, 2011, 2010, 2009, 2007 and 2005) will keep for up to 25 years. Chateau Doisy-Vedreines is best served 57 degrees Fahrenheit. The cool, almost cellar temperature gives the wine more freshness and lift. The wine will naturally warm in the glass, while it develops more aromatic complexities and fleshes out. Food pairing: Almond desserts, apple desserts, fruit, blue cheese, other hard and soft cheeses, custard, shellfish, spicy Asian cuisine, foie gras (perfect pairing with salty and savory dishes), etc. |
