Description: The Pigato variety is a slightly different form of Vermentino that makes noticeably distinct wines. Pigatos tend to be slightly more aromatic and richer in texture (with a lightly creamy edge to the mouthfeel) than wines made with the typical Vermentinos of Liguria, but still maintaining the zesty, mouthwatering acidity that helps give these wines their poise. Saline-tinged peach, herbaceous flowers (broom, acacia), and honeyed aromas are typical. Going into the finish, you might find a light citrus pithiness, and a saline accent that evokes the Ligurian shore!. Try this with fresh seafood, stews (e.g. Cioppino), or as an apertif. Being close to the ocean wouldn't hurt. The freshness and purity of the varieties are maintained by a brief maceration of the skins, at a moderate temperature during fermentation, and aging in stainless steel. Laura Aschero winery began its operations in 1980, converting the property land into vineyard that, in other times, were used for different types of crops. Today, in the vineyards of the sunny Riviera di Ponente, growing in terraces 150 feet above the sea level, born the wines of the Laura Aschero's winery, who still bears the name of the founder. Marco Rizzo, son of Laura, carries on this extraordinary production company, which gives all her passion to three varieties typical of the area: Vermentino, Pigato (a type of Vermentino with some distinct differences), and Rossese (aka Tibouren in Provence). The decision to produce only a few wines and especially local wines did not help this winery to be known on a large scale, but this has meant a significant investment in quality.
