The Wachau, though small, is home to over 650 winegrowers, many of whom tend steep, terraced vineyards along the Danube's northern banks. Historically, these southern-facing slopes have produced the most sought-after wines, but as the climate has warmed, vineyards on the southern side, with their cooler, north-facing slopes, are now gaining favor for their fresher, more balanced wines. The Fischer family has been making wine on the southern banks of the Danube for centuries, with their winery dating back to 1898. Today, fifth-generation Josef "Joe" Fischer manages 11 hectares of organically farmed Grüner Veltliner and Riesling, producing wines that express a deep respect for both the land and tradition. Joe's minimalist approach in the cellar, including spontaneous fermentation and selective malolactic fermentation, allows each parcel's character to shine through. With a newly built cellar and a commitment to sustainability inherited from his father, who has also been repopulating the Danube with the nearly extinct Huchen fish, Joe is solidifying his place as a rising star in the Wachau. |
