Akitabare is the kind of sake one can drink enjoyably for hours at a stretch. Its subdued, understated refinement evokes a sense of the northern province where it is meticulously brewed. Pleasingly dry and quite mild, a well-crafted traditional sake. This Junmai has a plum nose with subtle grass tones. The first sip has a fairly dry start filled with hints of lemon, plum, and grape skin tones. The viscosity is slick and shimmering and the overall feel is soft and balanced.
