| Description: | Bushmills Malt 21 yo is aged for 19 years in a combination of American oak casks and Spanish Oloroso Sherry casks, then transferred to old Madeira drums (that's the typical name for these large Madeira casks) for the final two years of it's maturation. Colum, our Master Distiller, gets quite lyrical abou tthis one, finding dark chocolate, nearly burnt toffee and even a hint of mint. Region Description. \"Irish Whiskey\" is whiskey from the Emerald Isle that is usually a mixture of malted and unmalted grain mash and distilled three times. Compared to Scotlands more than 90 distilleries, Ireland has only 3; Old Bushmills, Cooley and New Midleton each producing a wide range of whiskeys. |
