| Description: | Less common in the region, this Chardonnay is a sparkling cuve signed by a rising star of the Jura vineyard. We can indeed say that his parent, Guillaume Overnoy, has a good bottle since he turns out to be the great-nephew of Pierre Overnoy, star of Pupillin. Imbued with good peasant common sense, he cultivates his vines according to organic principles and vinifies the Chardonnay with indigenous yeasts while minimizing the doses of sulfur and prolonging the ageing. The result is stunning. The wine is both dense, rich in fruity notes, but endowed with great liveliness offered by a striking minerality. We recommend that you not only keep this bottle for a few years in the cellar, but also savor it after having opened it at least an hour in advance. Pair this wine with fine dishes such as a pasta dish, poultry marinated in white wine or a summer vegetable gratin. |
