Description: Technical notes Variety: 100% Palomino Fino. Appearance: Clear pale lemon-green. Nose: Clean light, subtle, delicate aromas of almonds, wild herbs, and bread dough. Palate: Light, dry, pleasant fresh notes of almonds. Food Pairing Suggestion: Olives, almonds, cured meats, anchovies, sashimi, salads, cold soups, fish, and seafood. Serving Temperature: 6º to 8º (43º to 46º). Best to consume within one year of bottling and one week after opening. Other text Aged in casks under a layer of yeast known as the flor, using the traditional Solera system within the old cathedral style cellars of Barbadillo.
