| Description: | Beginning with a subtle flavor profile, this wine intensifies with a blend of spices including cinnamon, allspice, and tarragon. It then leads to an essence of blackberry before finishing with a touch of plum. From start to finish, this wine is a showcase of bold and complex flavors. The Carignan vines have an average age of 40 years, with some even reaching over 100 years old. They are planted on clay-limestone soils and are sustainably farmed. Harvest is done partially by hand and partially by machine. The Carignan is kept in whole clusters and undergoes full carbonic maceration in tank. The Grenache is destemmed and macerated for 3-4 weeks in concrete vats, with fermentation using selected yeasts. After blending, the two varieties are aged in tank.
