From the first time that he fell into wine (and fell in love with his future wife) while working at our local grocery store, Mac has been on a path towards producing the best wines possible. Now, you often hear that phrase, but it doesnt often resonate with the finished winesbut Mac is different. He works the vineyards, experiments with different types of oak barrels, is always blending. And why.? To be sure that he can Truly produce the best wines that he can. And judging by how busy his tasting room is, and how packed our wine bar has been when he pours, you think so too!. His Beautiful Earth White is his homage to Chteauneuf-du-Pape blanc. It is comprised of the two main grapes of the Southern Rhone (70% Clairette Blanche and 30% Grenache Blanc) grown on the Westside of Paso Robles from the Paper Street Vineyard. Whole cluster pressed and cold fermented in stainless steel and neutral 500 L French oak puncheons. Minimal malolactic fermentation. Bottled after 6 months of elevage. |
