| Description: | At this point my back labels don't give variety information because I report all my grapes as just California Red Wine, but I am thinking about hiding some kind of code on the front for the variety. For now, Elephant is 100% Foot Stomped Syrah. -No Sulfites - Tested -Super clean winemaking is employed for purity -2 month maceration -Mostly Carbonic Macerations except for Niquel which is foot stomped -Barrel shaving to remove imperfections – See YouTube Video -Blending is done at the press for max control -Formerly worked with both Tony Coturri and Baptiste Cousin. |
