Description: | Winemaking:. The harvest generally takes place from 1st to 8th August. After harvesting the grapes are immediately chilled to 61°f. The fruit is pressed at the maximum of one bar of pressure. The premium must obtained is then set to ferment with selected yeasts at 61°- 63°f for 18-24 days. Aged in stainless steel containers under controlled temperature. Growing Areas:. The grapes come from the inner area of Petrosino, south-east of Marsala, in the North-West part of Sicily. These vineyards are ideally situated at about 600 feet above sea level. The soil is calcareous clay iron-rich thanks to proximity to the sea and the vines are planted espalier and they are kept shorter than usual in order to protect them the wind. Tasting Notes:. Our Pinot Grigio showcases soft aromatic flavors of white peach and pear and notes of perfumed rose. Food Pairing:. Enjoy our Pinot Grigio either sipping on its own or with seafood. Cellaring:.
