The way they work has not changed, and requires years of practice so that the master distiller understands the specificity of each in order to get the best out of it. Trusting only his palate, he constantly adjusts the gas pressure and wine flow, which change depending on atmospheric pressure and temperature. Round and slightly woody on the nose. Some notes of candied fruit on the palate, then very clear vanilla notes.
