| Description: | We love the Gaba do Xil white for the natural balance, subtle tension and transparent character at a great price ! Telmo Rodriguez (who makes a 3rd appearance on our top wines list top list) and Pablo Eguzkiza helped renovate old vineyards in the mountainous Valdeorras region of Galicia. With dramatic valleys and rocky soils, the site where their organically farmed Godello grows (interplanted with Doña Blanca and Treixadura ) has a cooler, wetter climate than the bulk of Spain. Here, the Godello-driven whites have fresher tones, with a subtle apple, pear and ripe lemon character, mingling with crushed stone and saline minerality, along with a hint of almond blossom. With a brief aging in stainless steel, Gaba do Xil's pure character is preserved in the bottle. Medium in weight, its juicy acidity softly hums within the understated fruit, and the billowy, chalky texture from aging on the fine lees contrasts with a mellow mineral undercurrent. Serve this lightly cold with dishes like grilled swordfish or yellowtail, lemon-pepper roasted chicken, and spaghetti alla carbonara. |
