Of the distilled spirit only the best 16% is kept for aging. The difference in Macallan whiskies is how long and in what style they are aged interestingly, with the Macallan 12-Year-Old Sherry and the 12-Year-Old Double Cask there are a lot of cross-overs between the two in terms of aging: both spend time in American and European casks, which have previously held sherry, and both are aged for a minimum of 12 years.
