| Description: | 100% Sauvignon Blanc. Short pruning to lower the yields. Traditional working of soil under the row. No herbicides, pesticides or phytosanitary products. In organic conversion. Manual harvesting. Slow & gentle pressing in pneumatic press. Juices carried by gravity (no pumps). Strict settling of the must to obtain purity. Fermentation with native yeasts and no SO2 in concrete tanks. One year ageing on the lees in the same tank before bottling with minimal use of SO2. Expressive citrus and orchard fruit aromas. Nice smoky and crushed stones minerality. This wine is showing nice density of fruit while displaying a lot of suavity. The finish is sharp and refine with the signature purity of the estate. |
