Description: | Los Javis Cerrudo is made with maguey Cerrudo in Santiago Matatlan, Oaxaca. The agave used to make this mezcal were roasted in an underground oven, crushed by horse drawn tahona, fermented with open air yeasts, and double distilled in a copper pot still. Tasting Notes:. Nose: Very ripe pear, mango, honeysuckle. Palate: buttered corn, honey, a bit of bbq sauce (without the tanginess), papaya and fresh ash. Finish: The heat lingers on the tongue as the butter and honey notes come through again the retro hale. |
