There is a lovely tension on the palate and a silky tannic line that leads to a pleasantly lingering finish. Although the fruit is purchased (from Damoy), the team at Boillot is able to pick the grapes themselves. The grapes are completely destemmed and fermented in small 228-litre casks." |
