Description: History,. Cascara, which is the Spanish word for husk" or "peel", is the skin of the coffee fruit, sometimes called a coffee cherry. To begin the process of coffee prodcution, the fruit of the coffee tree is picked and fermented. During this process, the skin and meat of the coffee cherry fruit is discarded and only the seed--what we call a coffee bean-- is retained. However, in countries where coffee trees grow natively, the skins are dried and made into a rather pleasant-flavored tea. This led us to the idea of experimenting with making the cascara into a liqueur. Tasting Notes,.
