Although some of their practices are not necessarily new to the world of whiskey, it is unusual to find a distillery adhering simultaneously to so many traditional methods and with such an attention to detail. Sourcing non-GMO grains, using mineral-rich water from an aquifer below the distillery, allowing slow and open fermentation, distilling in copper only, and leaning heavily upon the strict stipulations of Bottled-in-Bond production, New Riff cuts no corners. Therefore, it's no surprise that the accolades for this small distillery continue to grow. This style of whiskey is made of 100% malted rye grain, which is quite rare, even in today's craft distilling scene. Malted rye is rye grain that has undergone the process of malting. When you malt a grain you alter and, arguably, improve and refine its flavor. Nose: Savory, floral fruit, powdered sugar, espresso, balanced oak and vanilla fruits (plum skin, pear), oatmeal. Taste: Plump, rounded medium-full palate, spices, saltwater taffy, fruits, clove, and an interesting toasty-malty note. Finish: Focused spice with clove, pink peppercorn, woodsy. Light maple and cinnamon candy. Ripe bananas. Bottled in bond without chill filtration. 100% malted rye mash. Aged at least 6 years. 50% ABV (100 Proof). |
