Pickerell, who is famed for his whiskey finishing touch, a process he often called flavoring for adults, finishes the whiskey in black brandy casks during secondary maturation. This results in an added apricot note that plays perfectly alongside the honey and caramel tones of the pre-finished spirit. The distinctive part of the finishing process is a sonic-enhancement method that utilizes sound wave frequency to infuse the spirit as it ages. After the whiskeys have been married in the black brandy casks for finishing, theyre infused by the music of Metallica. This proprietary sonic-enhancement system Black Noise, pummels the whiskey with sound, causing increased movement of the liquid and wood interaction, which kicks up the wood-flavor characteristics in the whiskey.From the time Dave Pickerell was a cadet at West Point, he was fascinated with the effects of soundâthe way an organ can play a note that shakes an entire building.
