When it comes to selecting casks, it's not often we deviate from the oak family. So finishing a Single Pot Irish Whiskey in French chestnut casks came with a measure of guilt. Upon tasting the result, we quickly got over it. Nose: Red liquorice laces, fresh rosemary and mint, grated root ginger. Taste: Sweet fruit and spice, cinnamon toast, ripe banana. Finish: Aromatic green tea, dissipating fruit and spice, rich wood farewell. |
