| Description: | Caggio vineyard, Castellina in Chianti, Tuscany. The Caggio vineyard is planted with vines ranging from 10-22 years of age at an altitude of 1,000 feet, with southeastern and southwestern exposure and a vine density of 4,500 to 7,500 plants per hectare. The soil is typical of the area, with a medium limestone base and little water retention capacity. Wine maker notes The grapes were hand harvested on September 18th (Sangiovese) and September 3rd (Merlot). They undergo a temperature-controlled fermentation in stainless steel tanks at 82-86˚F and macerate for 15-18 days. Technical notes 13.5% abv. Food pairing Pasta with meat sauces, stews, grilled meats and mid-aged cheeses.
