It takes especially concentrated grapes to wear 100% new oak. Pavie's vineyard location and meticulous work in the vineyard, exclusively by hand, yields some of the most powerful fruit in all of Bordeaux. The wines are unfiltered and only seem to become richer, denser, and more concentrated. Bottled unfiltered, they even look as powerful as they taste. Pair with strongly flavored and rich dishes of roasted red meat with black truffles and smoked or extra aged cow's milk cheeses. |
