The beautiful Tuscan town of San Gimignano has the best version, producing crisp, refreshing wines with an attractively bitter finish. Winemaker and owner Simone Santini uses a little bit of skin contact, extended fermentation, and some lees ageing to give the wine floral aromas and a richer, creamier texture to balance the high acidity. |
