Domaine Sérol is a Gamay specialist at heart, but they planted 2 ha Chenin Blanc in 2018 to accompany 2 ha of Viognier, which is why this wine is called, "Why do without white"? With major loss from frost, these grapes are sourced from Limoux. Lees aging in a combination of cement tanks and 12-hl barrels give the wine a citrus-pith spice and elegant transparency. Tart green apples, pluots, sweet grass and gardenias. Richly textured with acidity that is persistent and lasting. |
