The first fill ex bourbon cask was deliberately chosen for a whisky that despite its youthful age, goes perfectly with our idea of quality and finishing. We give you a Caol Ila that could be described as a little prince. Delicately peaty. Notes of yeast, butter and smoked meat approach the nose timidly, like aromas wafting from a busy Sunday morning kitchen. On the palate, its as succulent as the finest sugared almonds made for the wedding of the century. Toasted tones of almond, hazelnut and candied peel. All rounded off with a saltiness more closely related to capers than to iodine. Goodbye, said the fox.
