The bright, clean, and lively Seven Springs Chardonnay grows in the rockier areas of the vineyard\u2019s mid-slope, offering a precise wine of clarity and finesse.\r\n\r\n\r\nThe Wines\r\nAt Evening Land Vineyards, we strive to make wines that reflect the essence of the vineyard from which they come. This is done through highlighting the unique conjunction between a specific place, nature, and a distinct moment in time. We work with one very unique and exceptional vineyard site, Seven Springs Estate, and seek to reflect its greatness in each bottle produced at our hands.\r\n\r\nOur Philosophy\r\n\r\nAt Evening Land Vineyards, we believe that stewardship of the land, vineyard sensitivity, and conscientious farming all work together to create high-quality, age-worthy wines that depict a true sense of place.\r\n\r\nStewardship of the Land\r\n\r\nHealthy vineyards create thriving ecosystems. In short, when the vines are farmed properly, the organisms that live amongst them\u00a0 \u2014\u00a0 including plants, animals, and human beings \u2014 flourish, too.\r\n\r\n\r\nVineyard Sensitivity\r\n\r\nAfter countless years of farming the same site, we\u2019ve found that being in tune with its unique idiosyncrasies is the best way to create terroir-specific wines. We believe that in addition to farming organically, implementing biodynamic principles, and using little to no sulfur, having discernment for vineyard sensitivity is key.\r\nTo us, vineyard sensitivity incorporates understanding a site\u2019s unique aspect, altitude, daily amount of sunlight, average annual rainfall, soil pH, row direction, and beyond. At Seven Springs, we\u2019ve learned that our soils have a very high moisture content, despite thriving in a rather hot and sunny climate, due to its composition. Because of the soils\u2019 high clay content, water from spring rainfalls is thus retained within them, eschewing the need for any form of irrigation during the warm summer season.\r\nThese complexities \u2013 solar radiation, angle of the sun, moisture, wind direction, and beyond \u2013 determine our viticultural decisions at Evening Land Vineyards. Organic and biodynamic practices are highly valued, though to us, this is simply scratching the surface. We believe that mastering a deeper overall comprehension of a site is what ultimately leads to better expression of place in the wines it births, which is of course, what we are after.
