Tatenokawa Komyo Dewasansan Sake Super Premium 720ml
Description: | Tatenokawa Komyo "zenith". This Sake Is Milled Down To 1% Of Its Original Rice Grain. We had the pleasure of tasting this Sake recently, and it was like drinking a cloud. Pure pleasure. In the history of sake, no brewery has ever been able to polish rice down to 1% before. So what does it mean to polish rice down to 1%? Takeshi Sato, the toji (head brewer) of Tatenokawa Brewery says that it takes 75 days to mill Dewasansan sake rice down to this single digit seimaibuai (rice polishing ratio). In general, the more the rice is polished, the lighter and delicate the resulting sake. So it makes sense that this sake is ethereal and graceful - unlike any other sake out there. It has a hint of jasmine flower on the nose and a slight round sweetness on the palate. Sato describes this sake to have, "no impurities." Despite it being airy, and light, it maintains a structure and roundness. Thanks to the ultimate transparency of the sake, it is clear that this sake comes from a completely different world of sake, and will develop Sake's new frontier. Prefecture: Yamagata. Rice Variety: Dewasansan. Seimaibuai (rice Polishing Ratio): 1%. Sake Meter Value: -2. Acidity: 1.4 |
